One of my New Year resolutions is to eat better and to that end we have been following a vegan diet which has encouraged us to eat loads of vegetables, fruit and beans. Sadly this has left me with a major chocolate craving, especially after the excess of Christmas. I decided to check out some vegan baking and I remembered that Jenny over on Mummy Mishaps had done some brownies with butter beans and they looked delicious but I didn't have any butter beans. However, she had adapted her recipe from a black bean recipe! I had some black beans so after some research on vegan brownie recipes, I tried my own out. I have to say that they are really, really good! You really wouldn't know what was in them and they give me a great chocolate fix; best of all they are very filling. I've tried to keep these as Vegan Brownies (adapted from a great recipe on Chocolate Covered Katie) but I know some strict vegans don't use flour or sugar so check our Katie's recipe for the substitutes or if you want to be gluten-free.
1x400g tin of Black Beans, drained and rinsed well (240g when drained)
15g Cocoa Powder
40g Plain Flour
pinch of salt
40g vegetable oil
75g agave nectar*
20g soft brown sugar
2 tsp vanilla extract
150g Dark Chocolate Chips
*Agave Nectar is just an organic sugar syrup. I picked this up when I was doing my vegan shop in Tesco just because I happened to spot it but you can use maple syrup or honey. I think I'd use maple syrup next time just because I love it so much!
- Preheat the oven to 180˚c (Gas 4). Grease a baking dish with vegetable oil, I used a 10" x 10" dish but I think 8" x 8" would be better for thicker brownies.
- Blitz the black beans in a food processor or with a hand held blender, try and get them really smooth.
- Add all the other ingredients except the chocolate chips and mix all together, again in the food processor or with a hand held blender. Keep blending until it is super smooth.
- Add most of the chocolate chips keeping some back to sprinkle on top.
- Pour the mixture into the prepared dish, sprinkle the leftover chocolate chips on top and pop in the oven for 15 minutes.
- Once out of the oven try and leave it to cool and firm up for another 15 minutes but they taste best when they are still slightly warm and gooey. Enjoy!
